Roasted Green Beans and Tomatoes

 

 

 

 

 

 

 

 

 

1 pint grape tomatoes
1 pound green beans, trimmed
2 tablespoons olive oil, divided
Salt & pepper to taste

1) Preheat oven to 425˚. Line roasting pan or sheet tray with foil.
2) Toss tomatoes with 1 tablespoon olive oil, salt & pepper to taste. Spread evenly over sheet tray. Roast for 10-15 minutes, until they start to shrivel & release liquid.
3) Toss green beans with remaining oil, and more salt and pepper. Add to tray with partially cooked tomatoes. Carefully mix together. Roast for additional 8-10 minutes, until green beans are tender.
