Raw Pepita Mushroom Pâté

I developed this recipe while trying 3 days raw. It’s tasty, and can be spread on just about anything! I suggest raw vegetable planks below, but if you aren’t concerned with keeping it raw, try it on toast or crackers. Pepitas are pumpkin seeds. In this recipe, I use raw, shelled pepitas. They can be found in most health food stores, Trader Joe’s, Whole Foods, and other stores that carry raw nuts and seeds.

INGREDIENTS

1/4 C raw pepitas (raw shelled pumpkin seeds) + extra for garnish
1/4 C raw cashews
8 oz white mushrooms (about 4 large), roughly cut or broken into 1″ pieces
2 oz white onion (about 1/4 small onion), roughly chopped into 1″ pieces
1/4 tsp sea salt
3/4 tsp lemon juice
Pepper to taste (optional)

Raw vegetable planks of your choice – firm vegetables are best

 

PROCEDURE

Place all ingredients in food processor. Purée, scraping the sides as necessary, until smooth. Spread a thick layer onto vegetable planks. Top with fresh black pepper. Garnish with 3-4 pepitas.
