How to: Roasting Acorn Squash










These are basic instructions for roasting acorn squash, not really a recipe. When I have the time to do it, I like to roast squash, cube it and refrigerate it for use later in the week. Here’s my method:

1 Preheat oven to 350˚.
2 Clean outside of squash & place on cutting board. Carefully cut in half, parallel to ribs.
3 Scoop out seeds and pulp with a sturdy tablespoon and discard.
4 Place on a baking sheet face up and bake for 45 – 60 minutes, until tender enough to easily pierce with a fork.
5 Remove from oven and allow to cool enough to handle, but do not refrigerate just yet.
6 Cut into quarters and peel off skin by hand. It should come off very easily as long as it’s still warm.
7 You can use immediately or cut into cubes and refrigerate for future use.
