Banana Cashew Pudding
1/2 lb raw cashews
1/2 lb bananas (peeled)
1/2 cup plain almond milk
1 Put cashews in your food processor. Process on highest setting until they become a fine powder.
2 Add in bananas and process again until mixture becomes smooth, stopping to scrape the sides with a silicone scraper / spreader to fully incorporate the ingredients.
3 Add in the almond milk and process again, stopping again to scrape the sides with a silicone scraper / spreader to fully incorporate the ingredients.
This whips right up into a beautifully rich and fluffy pudding. It is naturally sweet, and makes a great dessert, or even a breakfast option. The fat and protein content of the cashews balance out the sugar of the bananas, allowing your body to digest more slowly, and keeping your blood sugar more stable.
