Smashed Red Potatoes

Mashed potatoes are my ultimate comfort food! I can never eat them at a restaurant because they typically contain lots of butter and milk. This recipe is a spin on traditional mashed potatoes. They’re more smashed than super creamy and whipped. They’ve also got a slight kick!

 

Ingredients:

2 lbs small red potatoes
10 cups water
1/2 cup unsweetened almond milk (or other unsweetened dairy alternative)
2 tbsp vegan butter alternative (I used Earth Balance Soy Free Natural Buttery Spread)
1 tsp ground mustard seed
1 tbsp dried chives
1 tsp Sriracha sauce
sea salt

Directions:

1 In a large pot, bring 10 cups of water and some salt to a boil.
2 Clean potatoes, keeping skin intact, and chop into approximately 1 inch pieces. Carefully add these to the boiling water.
3 Allow to boil for 15 – 20 minutes, or until very tender. Drain thoroughly and return to the pot.
4 Add in milk alternative, vegan butter, ground mustard seed, chives, Sriracha sauce, and 1 tsp sea salt (or alternate amount to taste). Thoroughly mash all ingredients together with a potato masher or pastry blender.
5 Optional: grind fresh black pepper over potatoes to taste, and stir together with a spoon before serving.
