Oven Roasted Cauliflower
This is so simple and delicious! Cauliflower is one of those vegetables I always forget about, but I should not. It is a low calorie, nutrient dense food. It’s a good source of protein, thiamin, riboflavin, niacin, magnesium and phosphorus. Cauliflower is a great source of dietary fiber, Vitamin C, Vitamin K and Vitamin B6.
1 large head cauliflower
2 – 3 tablespoons olive oil
Salt and pepper to taste
1 Preheat oven to 350.
2 Clean cauliflower and cut off the stem. Slice in half, then break or cut into flowerettes approximately 2 inches across at the widest part.
3 Place in a roasting pan and drizzle with olive oil. Sprinkle with salt and pepper to taste. Toss cauliflower to coat in oil.
4 Place in the oven and roast for about 30 minutes or until tender.
