Curly Endive with Butter Beans and Tomatoes
2 tablespoons olive oil
3-5 cloves garlic, minced
1/2 pint grape tomatoes
Approx 2 cups cooked butter beans
1 head curly endive
Fresh black pepper
1 Over a medium flame heat a large frying pan until hot.
2 Add in minced garlic, grape tomatoes and butter beans. Sprinkle with a few pinches of salt.
3 Cook, stirring frequently, until tomatoes start to split.
4 Clean the curly endive and loosely chop.
5 Add to the frying pan and sauté until curly endive becomes bright and tender. Sprinkle with freshly ground black pepper.
