Asian Glazed Golden Beets
3 medium golden beets
2 tbsp olive oil
1/2 tsp miso paste
2 tsp soy sauce
1/2 cup warm water
1 Preheat oven to 375˚.
2 Clean and peel beets. Cut into approximately 1″ pieces.
3 Put beets in a small roasting pan and toss in the olive oil.
4 Dissolve miso in 1/2 cup warm water and add soy sauce. Drizzle over the beets.
5 Cook beets at 375˚, stirring occasionally, for approximately 1 hour or until all liquid has cooked down.
