Tangy Tahini Pear Dressing
This creamy, complex dressing is best over a simple salad.
1/8 cup olive oil
1/4 cup apple cider vinegar
juice of 2 limes
1/4 cup tahini
1/2 large bartlett pear, peeled and chopped into large chunks
2-3 sprigs parsley
1 scallion bulb
1/2 teaspoon salt
Put all ingredients in a food processor and blend for 10 – 15 seconds until smooth & the scallions and parsley are finely minced.
