Easy Peasy Gluten Free Vegan Cheezy Mac

 

 

 

 

 

 

 

 

This is a very quick and easy version of vegan mac & cheese. The texture of the nutritional yeast is reminiscent of baked macaroni & cheese.

Ingredients:

4oz uncooked gluten free pasta (I used Ancient Harvest Organic Quinoa Supergrain Pasta – Veggie Curls) Be sure to choose a variety with texture.
1 quart water
salt
2 tablespoons olive oil
1/2 teaspoon chili powder
2 tablespoons vegan butter substitute like Earth Balance Natural Buttery Spread
1/3 cup Nutritional yeast

Directions:

1 In a 2 quart or larger pot bring 1 quart of water to a boil over high heeat.
2 Add in salt, olive oil and gluten free pasta and stir. Boil for about 6 minutes or until desired tenderness is reached.
3 Drain pasta and return it to the pot.
4 Stir in vegan butter substitute.
5 Combine chili powder and nutritional yeast. Sprinkle over pasta in thirds, stirring in between.

Serves two. Yum!

Extra bonus: nutritional yeast is a good source of protein, magnesium, copper, manganese, dietary fiber, thiamin, riboflavin, niacin, vitamin B6, folate, vitamin B12, selenium, pantothenic acid and zinc. Cheese can’t beat that!
