5 Minute Watermelon and Tofu Salad
Can I really call this a recipe? It’s more of an assembly of some relatively healthy convenience items. It sprung out of despiration one night. I got home late from work, and was about to order takeout. I decided to instead stop at the grocery store. Although I don’t often buy convenience items, I figured that anything I prepared would be much healthier than anything I would have ordered in.
organic pre-washed salad mix
extra firm organic tofu
watermelon (I went for pre-cut cubes to make this even quicker)
salad dressing of your choice – something citrus or acidic tasting will go with this nicely (I used Annie’s Naturals Lemon & Chive dressing)
Directions to make 1 serving:
1 In a large bowl place about two hands full of salad mix.
2 Cut about 3oz tofu into small cubes, and add to the salad mix.
3 Cut about a cup full of watermelon into small cubes, and add to the mix. Toss all ingredients.
4 Drizzle with salad dresssing.
Let’s talk nutrition for a moment. Those 5 minutes just provided you with a delicious, nutrient dense meal! Watermelon is low in calories, but is an excellent source of Vitamin C and is high beta carotene concentration. It contains vitamin B, especially B1 and B6. It also contains the antioxidant lycopene, and the minerals potassium and magnesium. Nutrients will vary depending on what type of salad greens you get, but they will likely have lots of vitamin A, vitamin C, calcium and iron. The tofu provides calcium and protein.
