Just Like Mom’s Sausage and Peppers

With Mother’s Day just around the corner, I thought I’d post a recipe that I recreated from memory of one of my mom’s dinnertime dishes. I thought I had made her sausage and peppers my own.. Funny enough, I called her today just to see how she did it, and as it turns out, we make the dish the exact same way. Like mother like daughter, I suppose!

You will need:
6-8 links of your favorite sausage (I like to use half spicy and half sweet sausages.)
1 large yellow onion
3 bell peppers of various colors
olive oil









1 Place a large frying pan with a small amount of olive oil over a medium flame.
2 Put sausage links in the pan and cover loosely. Turn every 5 minutes or so to brown on all sides, and cook most of the way through (about 15-20 minutes depending on the type and size of sausage).
3 While the sausage is cooking, clean and seed the peppers, and slice them into strips. Cut the onion into thin slices and set aside.
4¬†When it’s mostly cooked, move the sausage onto a cutting board & slice diagonally.
5 Put the peppers and onions into the frying pan with the oil from the sausage. If there is too much oil in the pan, drain some first. Cook over medium to high heat until the vegetables soften.
6 Add the sausage back in, and cook for another 5-10 minutes, until all ingredients are cooked through.
