Extra Golden Yellow Zucchini with Mushrooms

Turmeric makes the yellow zucchini extra golden! The spices in this recipe make for an interesting, flavorful dish.

olive oil
1 1/2 – 2 cups mushrooms (I used oyster mushrooms, but you can use whatever type you prefer)
2 large yellow zucchini (you can also use summer squash)
1 tsp turmeric
1/2 tsp chili powder
1/2 tsp tekka
1 tsp dill
about 1/4 cup fresh parsley, chopped
1/2 red onion, finely diced
salt to taste

1 Coat the bottom of a large frying pan with olive oil & place over a medium flame.

2 Clean mushrooms, break into approximately 1 inch pieces (depending on the type) and add them to the pan. Sprinkle a pinch of salt over the top, and allow to cook for a few minutes while you prep the zucchini, turning periodically.

3 While mushrooms are cooking, cut the zucchini in half. Slice each half longways into about 9 strips and add to the frying pan.

4 Sprinkle the turmeric, chili powder and dill over the zucchini. Cover pan and allow to cook for about 5 minutes.

5 Uncover. Add parsley, onions and another pinch of salt.

6 Allow to cook, turning occasionally, for another 7 – 10 minutes, or until all zucchini has softened.
