Garlicky Olive Oil

I use this in a lot of recipes. I like to make a big batch every so often and keep it in the fridge for future use.

1. Put 20 or so cloves of peeled garlic in a stainless steal frying pan.
2. Cover completely with olive oil.
3. Cook on a low flame until garlic cloves can easily be smashed with a fork. 20 or so minutes will usually do it, but keep an eye on it because it’s easy to overdo it and burn the garlic.
4. Allow to cool before handling. Use a canning funnel to pour garlic and oil into a glass jar. Store in the fridge for future use.
