Sweet & Savory Red Cabbage & Onions
1. Put olive oil in a large frying pan over a medium flame.
2. Rinse onion. Cut off ends & discard. Halve the onion & remove and discard the skin. Slice as thin as possible & place into the frying pan. Sprinkle with a bit of salt (2-3 twists of a grinder).
3. While the onion is cooking, peel off the outer few leaves of the cabbage & discard. Wash cabbage head thoroughly & shake off excess water. Halve cabbage & cut into 1/4″ slices. Place on top of the onion & cover loosely. Allow to cook for about 3-4 minutes.
4. Remove cover & drizzle with balsamic vinegar. Turn all ingredients with tongs every few minutes until cabbage is tender.
