Split Pea Soup
1. Put olive oil in a sauce pot & place over medium flame.
2. Chop onion & bacon, and add to the oil. Cook for a few minutes until onions soften.
3. Rinse split peas, drain, and add to the pot.
4. Add water. Turn up flame & bring the mixture to a boil.
5. Reduce to a simmer & add a few pinches of salt.
6. Cover & let simmer for about 2 hours, stirring every 15 minutes or so.
