Nutritional Yeast is Your Friend!

The name does not sound very appetizing, but trust me, nutritional yeast is a tasty treat!

It is, in fact a yeast, grown on cane and beet molasses. The “nutritional” part of the name refers quite literally to all of the vitamins & minerals it contains—protein, B vitamins and folic acid. Vegans often consume nutritional yeast for the B-12 it contains, as it is primarily found in animal products.

I was first introduced to the stuff by a former roommate while she was perfecting a vegan mac & cheese recipe. Immediately, the name and appearance turned me off! Nutritional yeast is this ultra-bright yellow, flakey powder. I reluctantly tried it and was pleasantly surprised! It has the color, tanginess and saltiness of cheese, and makes a great substitute.

Nutritional yeast can be sprinkled over popcorn, pasta, rice and grains. It can be made into sauces and spreads. Use it to add a cheesy flavor or tangy kick to foods. It can often be found in the bulk bin at the health food store.
